Introduction
Hi everyone, JOA Mom here! 👩🍳
If you’re looking for a bold and flavorful Korean dish, Jeyuk Bokkeum(Korean Spicy Pork Stir-fry) is one of the best recipes you can easily make at home.
Jeyuk Bokkeum, also known as Korean Spicy Pork Stir-fry, is loved for its rich gochujang-based sauce, tender pork, and the perfect balance of spicy, savory, and slightly sweet flavors.
In Korea, Jeyuk Bokkeum is often considered one of the most popular lunch menu choices among office workers, thanks to its bold flavor and satisfying portion.
Wrapping the pork in fresh lettuce creates an incredible bite — the spicy meat and crisp vegetables balance each other perfectly.
Even though it looks like a restaurant-style dish, Jeyuk Bokkeum is surprisingly simple to make at home.
Today, I’ll show you how to make authentic Jeyuk Bokkeum step by step.
Nutrition / Why this combo
The reason Jeyuk Bokkeum is so popular is its rich and layered flavor.
The combination of gochujang, garlic, soy sauce, and sweetness creates a deep umami sauce that perfectly coats the pork.
As the pork cooks, the sauce caramelizes slightly, creating a glossy, flavorful finish.
Jeyuk Bokkeum is also incredibly versatile — perfect for quick meals, family dinners, or even serving guests.
You can enjoy it with rice, wrap it in lettuce (ssam), or pair it with Korean side dishes.
Once you learn Jeyuk Bokkeum, it becomes one of those go-to meals you’ll make again and again.
Gochujang, the key ingredient in Jeyuk Bokkeum, is not only rich in flavor but also known for its fermented qualities.

Cooking Tip
For deeper flavor, marinate the pork for at least 20–30 minutes.
If possible, let it sit for 1–2 hours to make the meat even more tender.
Cooking Jeyuk Bokkeum over high heat is key to achieving that slightly smoky, restaurant-style flavor.
Also, cook the pork first before fully adding the sauce to prevent steaming and create a better texture.

🧂 Sugar – 2 pinches
🍶 Mirim – 1 tbsp
🛢️ Cooking oil – 1 tbsp
🧅 Onion – 1/4
🌿 Green onion – 1/2 stalk
🌶️ Green chili – 1
🌶️ Gochugaru – 2 tbsp
🧄 Minced garlic – 1 tbsp
🧂 Soy sauce – 1 tbsp
🧂 Salt – 2 pinches
🍯 Corn syrup – 1 tbsp
🌶️ Gochujang – 1 tbsp
🛢️ Sesame oil – 1/2 tbsp

5 Simple Steps
1️⃣ Prepare the pork
Place the pork in a bowl and season with sugar and mirim.
Gently massage to tenderize the meat and remove any unwanted odor.
💡 JOA Mom’s Tip
Starting with sugar and mirim helps the pork become softer and juicier.
If there is excess moisture, pat it dry with a paper towel to ensure proper searing.
2️⃣ Prepare the vegetables
Slice the onion, green onion, and chili.
Set aside the onion and green onion, and use the chili for the sauce.
3️⃣ Make the sauce
Mix the chopped chili, gochugaru, garlic, soy sauce, salt, corn syrup, gochujang, sesame oil, and 1 tbsp of water.
💡 JOA Mom’s Tip
Letting the sauce rest for about 30 minutes enhances the color and deepens the flavor.
4️⃣ Cook the pork
Heat a pan over medium-high heat and cook the pork first.
Once it begins to brown, lower the heat slightly and add the sauce.
💡 JOA Mom’s Tip
A properly heated pan creates that sizzling sound, which is key to achieving authentic flavor.
5️⃣ Add vegetables and finish
Add the onion and green onion, stir-fry for 2–3 minutes, and finish with sesame seeds.
(Add 1–2 tbsp of water if needed.)
💡 JOA Mom’s Tip
Avoid overcooking vegetables — a slight crunch improves the overall texture.
